Cuvée Bansionensi

The cultivation of the vine has always been present in the Taillet family, however the development of Champagne began a little later. The vines were maintained to produce fine grapes, healthy and of quality. It was not until Daniel Taillet that the first bottles were marketed. We are in 1961 and the Maison Taillet is born.
The story begins in 1995, when Éric Taillet succeeded his father by continuing to cultivate his vines with respect, to maintain them in order to obtain exceptional harvests. Today, he has the chance to share this passion with his two children.

L’authentique des Taillet

GRAPE VARIETY : 100 % Chardonnay
VINEYARD AND VITICULTURE:
The Marne valley, Binsonnois terroir.
 Clay-limestone soils. Vines over 20 years old on average.
Reasoned viticulture, grass cover crops and mechanical ploughing.
Leaves treated with algae and Organic certified trace elements.

PRESSING AND VINIFICATION :
Traditional Dollat wood pressing.
 Extraction and separation of the first pressing cuvée A from second pressing cuvée B. Natural Racking.
 Maturation on fine lees in thermo-regulated vats or oak casks, no malo-lactic fermentation.

AGEING : 60 months. 2011 vintage.
DOSAGE : 5 g/l
Liqueur wine base from 2004 vintage and refined cane sugar.

Décennie 2004 Extra Brut

GRAPE VARIETY : 50 % Meunier / 50 % Chardonnay
VINEYARD AND VITICULTURE :
The Marne valley, Binsonnois terroir.
 Clay-limestone soils. 
50 year old vines on average.
Reasoned viticulture, grass cover crops and mechanical ploughing.
Leaves treated with algae and Organic certified trace elements.

PRESSING AND VINIFICATION :
Traditional Dollat wood pressing. Extraction and separation of the first pressing cuvée A from second pressing cuvée B Natural racking. Maturation on full lees, no malo-lactic fermentation, no filtering, cold stabilisation or battonage stirring. Meunier in brand new oak casks (Tonnellerie de Champagne) and Chardonnay in enamel vats.

AGEING : 10 years minimum
DOSAGE : 3,6g/l
Liqueur : wine base from 2004 vintage and refined cane sugar.

Bansionnensi Extra Brut
GRAPE VARIETY : 100 % Meunier - Blanc de Meunier
HISTORY : Bansionensi is the Latin name for Baslieux, the original terroir of the Belval valley, home of the Meunier vine.

Vines over 37 years old on average.
Reasoned viticulture, grass cover crops and mechanical ploughing.
Leaves treated with algae and Organic certified trace elements.

PRESSING AND VINIFICATION :
Traditional Dollat wood pressing. Extraction and separation of the first pressing cuvée A from second pressing cuvée B. Natural racking. Thermo-regulation, 18°c alcoholic fermentation. Maturation on fine lees in casks and thermo-regulated vats. No malo-lactic fermentation.
AGEING : Over 36 mois on agrafe cork. 2012-2013 Multi vintage.
DOSAGE : 4 g/l
Liqueur : wine base from 2004 vintage and refined cane sugar.

Le Bois de Binson Extra Brut

GRAPE VARIETY : 100 % Meunier - Blanc de Meunier
HISTORY : Daniel Taillet planted about half an acre of Meunier in the locality of « Le Bois de Binson » in 1956, on the Montigny terroir at the heart of the Marne valley. 60 years on, Eric Taillet gave it the dimention of an unforgettable 100% Meunier parcel.

The Marne Valley, sandy-clay-limestone soils. Vines planted across on the hillside for maximum
sunshine. Reasoned viticulture, grass cover crops and mechanical ploughing.
Leaves treated with algae and Organic certified trace elements.

PRESSING AND VINIFICATION :
Traditional Dollat wood pressing. Extraction and separation of the first pressing cuvée A from second pressing cuvée B . Natural racking. Thermo-regulation, 18°c alcoholic fermentation. Maturation on lees in casks or thermo-regulateed vats.

AGEING :36 months on agrafe cork. 2012-2013 Multi Vintage.

Exlusiv’T Brut

GRAPE VARIETY : 100 % Meunier

GRAPE VARIETY : 33 % Pinot Meunier / 33 % Chardonnay / 33 % Pinot Noir

VINEYARD AND VITICULTURE :
Thte Marne valley, Binsonnois terroir. Marl-clay-limestone soils.
 35 year old vines on average. Reasoned viticulture, grass cover crops and mechanical ploughing.
Leaves treated with algae and Organic certified trace elements.

PRESSING AND VINIFICATION :
Traditional Dollat wood pressing. Extraction and separation of the first pressing cuvée A from second pressing cuvée B. Natural racking. Maturation on fine lees, no malo-lactic fermentation. 
 5 year old multi vintage base, 40% reserve wine and 60% from the latest harvest.
AGEING : 24 months
DOSAGE : Between 6 and 9 g/l
Liqueur : wine base from 2004 vintage and refined cane sugar.


LUMINOSI’T

GRAPE VARIETY : 29 % Meunier, 29 % Chardonnay, 34 % Pinot Noir. A small addition of 8% red wine made from Champenois Pinot Noir give it this Luminosi’T.

SUR LE GRANDMARAIS

GRAPE VARIETY : 90 % Meunier et 10 % Chardonnay.
HISTORY : Originally a marsh transformed into a vineyard in the early 1900s, replanted in 1986 following the frost in the previous year. In parcels with replacement vines, harvested all at once to get the Meunier's maturity and the freshness of Chardonnay.
